MEET JUNKO HAMILTON

Culinary Arts Specialist

Experienced cooking instructor in various cuisines, including Japanese, Irish and other European styles. Junko has a deep knowledge of the culinary arts, in particular fermentation and the relationship between food & health. Between 2008 and 2014 she moved to Dublin and ran workshops in Ireland & France for many well known chefs and restaurants. She has appeared as a guest lecturer at Electric Picnic, Experience Japan and a host of similar events. She now lives in Kyoto prefecture near the Japan sea, where she opened her own cooking school & café, tabel table. Junko’s policy is: “You are what you eat.”

 

Japanese sauces and basic dishes with Umami

Washoku, or traditional Japanese cuisine, is based around five essential ingredients referred to as “sa-shi-su-se-so”, which are used to create distinctly Japanese flavors. The five ingredients are sugar (sa), salt (shi), vinegar (su), soy sauce (se), and miso (so), which may be combined with dashi broth, sake, and spices to make a variety of sauces and condiments.

Japanese condiments and sauces offer a unique flavour not found in any other cuisine. Homemade sauces are the secret to delicious Japanese foods at home. The art to understanding and cultivating the most authentic Japanese sauces and knowing when, where and how to use within each dish is what separates a good dish from a great, authentic, mindful and nourishing dish.

In this sessions, you will not only learn what the staple Japanese sauces are, but also learn how to make them alongside some quintessential Japanese dishes in this interactive cooking class.
