MEET MASTER TOSHIO TANAHASHI

Shojin Master

Toshio Tanahashi, was born in 1960. At the age of 27, Tanahashi decided to serve as an apprentice at the Gesshinji Temple in Shiga prefecture, near Kyoto. A nunnery famous for its abbess’ excellent shojin cooking, he trained there for three years. In 1992, he opened his restaurant Gesshinkyo in Tokyo.  In 2000, Vogue Nippon ran a series of articles featuring his cooking and he was invited to demonstrate his style of cooking at the Victoria and Albert Museum in London. In the same year,

Tanahashi’s story was dramatized for a TV series entitled “Honmamon” (The True Thing) by NHK Broadcasting, and he introduced Chinese traditional shojin style from China in a program of NHK BS. Tanahashi collaborated with a French chef at Hotel Okura in Tokyo to widen the possibilities of vegetable cuisine in 2003.

In the same year, he gave lectures and demonstrations at the Japan Society in New York and Boston. Tanahashi has been featured by The New York Times, The Sunday Times, The Japan Times, The Financial Times, the Guardian, and Telegraph Magazine. He is the author of Shojin (Bunka Publishing Bureau, March 2002), a beautifully photographed recipe book, in Japanese, which outlines his philosophies of shojin ryori.

We will be preparing ichiju issai – the basic meal of the Buddhist monks’ shojin temple cuisine  ichi means one and ju means soup, while sai refers to dishes—so ichiju-issaai literally means, "One soup, one dish." Rice and pickles are always served as well, but the soup and other dish is free to change depending upon the season.  For the workshop there will be dessert as well..    We will also be conducting a group meditation of grinding sesame, an extremely important activity for the spiritual training of any Zen monk.

  • A typical offering will last 2 Hours

  • The Offering will be recorded and a Post Session Replay will be sent to all registered guests. So even if the timezone doesn’t align, you are still able to connect and delve into the offering in your own time and at your own pace.

  • There are two booking options: Option 1 - The offering without Mortar. Option 2 - The offering with Mortar which will be sent to you in advance of the offering to be used during the offering.

What will happen during the offering?

First there will be an introduction to Shojin cusine, followed by a group sesame meditation. Once the meditation is complete Toshio guide you through how to cook this traditional meal in addition to dessert.  We will then sit down and eat together, during which you will have the opportunity to ask Toshio questions, both around the food, and well as life as a Shojin master.
